- Ground beef will account for 35 to 50 percent of the total, in one- to two-pound packs.
- To store this, you will need between 3.5 and 4.5 cubic feet of freezer space.
What is a custom beef share?
It means you are buying a portion of an entire animal. Available portions include:
- One eighth
- One quarter
- One half
- An entire cow
We will cut, wrap and label your order according to your preferences.

How much meat is in a quarter cow?
It can vary by animal and cut preferences, but you will generally take home 90 to 110 pounds.
How much freezer space will I need?
- For a quarter cow: 3.5-4.5 cubic feet
- For a half cow: 7.0-9.0 cubic feet
What cuts will a quarter cow yield?
- Steaks (ribeye/New York strip/sirloin)
- Roasts (chuck/arm/rump)
- Short ribs

Can I choose how it’s cut?
Yes, you can. Your choices include:
- Steak thickness
- Roast size
- Ground pack size.
We’ll confirm with a simple cut sheet.
What does the term ”seam butchering” mean?
It means the cuts follow the natural muscle seams for uniform steak thickness and even cooking.
How long does the beef age from harvesting to processing?
It is typically seven days, but it depends on our schedule and food safety.
What is the timeline for delivery?
After we receive your deposit, it typically takes one week for us to harvest, age, and process your beef. It is then available for delivery.
How is processed beef packaged?
It is vacuum-sealed, labeled with cut and weight, and then frozen.
What is your delivery area?
We can deliver in north-central Florida to Williston, Ocala and Gainesville. Or you can pick it up from our Williston location.
What is your USDA status?
Our USDA certification is currently in process. However, we are exempt at the moment because we are selling shares of at least one-eighth of a cow.
What is the shelf life for your frozen beef?
When vacuum-sealed and stored correctly, it will be good for eight to twelve months.
