Here is what you can expect to get if you purchase one quarter of a cow. (Double these values for half a cow.)
  • You will typically take home between 90 and 110 pounds of beef.
  • Available steaks include ribeye, New York strip and/or sirloin. The sirloins can be as much as an inch thick.
  • Your roast choices include chuck, arm and rump. You typically get two to three pounds
  • Other cuts can include short ribs, brisket portion and stew.
  • Ground beef will account for 35 to 50 percent of the total, in one- to two-pound packs.
  • To store this, you will need between 3.5 and 4.5 cubic feet of freezer space.

Yes, you can. Your choices include:

We’ll confirm with a simple cut sheet.

It means the cuts follow the natural muscle seams for uniform steak thickness and even cooking.

It is typically seven days, but it depends on our schedule and food safety.

After we receive your deposit, it typically takes one week for us to harvest, age, and process your beef. It is then available for delivery.

It is vacuum-sealed, labeled with cut and weight, and then frozen.

We can deliver in north-central Florida to Williston, Ocala and Gainesville. Or you can pick it up from our Williston location.

Our USDA certification is currently in process. However, we are exempt at the moment because we are selling shares of at least one-eighth of a cow.

When vacuum-sealed and stored correctly, it will be good for eight to twelve months.
